Chire is a highland area located in Kere Woreda, part of the Sidamo region, known for producing the specialty Sidamo coffee of Ethiopia.
The Chire processing station works with over 900 smallholder farmers who grow coffee on plots ranging from 1 to 2 hectares. Coffee here is harvested earlier than in other regions, and the majority is thoroughly washed, favored for its elegant and mild fruity flavors. The harvested coffee goes through a rigorous selection process.
After harvesting, the coffee cherries are depulped and fermented for a specific period, then washed with clean water and spread out to dry on elevated drying tables. These tables are primarily constructed from bamboo and local hardwoods. During the three-week drying process, the coffee is regularly rotated and covered during the hottest midday hours to protect it from harmful sunlight.
Taste Note: The dry aroma features notes of lemon zest, bergamot orange, and light floral scents. The first sip reveals flavors of peach combined with hints of orange and jasmine, culminating in a sweet and delicate caramel finish.
