THE STORY BEHIND
Brayan, a producer from Acevedo, Huila, in the rural coffee-growing region of San Adolfo, comes from a place known for its thriving coffee production. His father instilled in him a deep respect for land and nature, and from the age of 13, Brayan joined him after school to learn about coffee—skills and values that would shape his future.
Brayan initiated a project involving over 60 coffee growers, including his family, to collect carefully selected coffee cherries from all over the town. Together with Forest and the Ancla processing station, they employed fruit fermentation to create truly unique flavor profiles.
UNIQUE FLAVORS THROUGH SPECIAL PROCESSING
The process begins with a 24-hour fermentation in plastic bags to enhance the flavor, followed by a 24-hour aerobic fermentation. The cherries are then depulped and submerged with dehydrated grapes for a five-day anaerobic fermentation to intensify their flavors. The beans are then dried for ten days, with an additional five days of flavor maturation.
Tasting Notes: The dry aroma offers the scent of candied grapes and sweet grape fragrance. Upon tasting, there is a distinct flavor of grape candy, accompanied by notes of blueberry jam and peach, making for a delightfully sweet and complete flavor experience.
